No Bake Coconut Almond Granola Bar

3 Tbsp Coconut Oil1/4 Cup Honey1/3 Cup Brown Sugar Packed3 Cups Quick Oats1 Cup Puffed Brown Rice Cereal (or Rice Krispies)3/4 Cup Shredded Coconut1/2 Cup of Sliced Almonds2-3 Squares of Semi-Sweet Baking Chocolate or choice of Chocolate Chips
1. Grease a pan 8X8 or larger.
2. Add Coconut Oil, Honey, and Brown Sugar in a sauce pan and heat to a boil. (medium-low heat)
3. While waiting for a boil, combine in a big bowl oats, cereal, coconut, and almonds.
4. When the sugar/oil mix begins to boil stir constaintly for at least two min. You want the sugar to be completly dissolved and the oil and sugar to be combined.
5. Pour sugar/oil mix over oat mix and stir until completly coated.
6. Pour mix into greased pan. VERY IMPORTANT: you must SMASH and PUSH this mix down very well. If you have a large pan you will only want to mold the mix on one end. You will want about 1/2 to 3/4 inch deep. Smash and smash!
7. When the smashing is finished you can sprinkle chocolate chips on top. I melt the chocolate and smooth over the top. (very thin layer)
8. Let cool for at least 2 hours on counter. Then cut into bars.
IMPORTANT: If you did not smash enough the mix will crumble and be a granola...not a bar.
