Jamie Oliver's chicken, sausage and prawn jambalaya

4 chicken thighs, skin on4 chicken drumsticks, skin onSalt and pepperCayenne pepperOlive oil300g smoked sausage1 large onion1 green pepper1 red pepper4 sticks of celery4 fresh bay leaves4 springs of fresh thyme6 cloves of garlic1-2 fresh red chillies1x400g tin of chopped tomatoes1.5 litres chicken stock700g long-grain rice16-20 King prawnsHandful fresh parsley
Brown the chicken and sausage over a medium heat. Once browned, add onion, peppers, celery, bay, thyme, salt and pepper. Fry over medium heat for 10-12 minutes. Once softened, add garlic and chillies. Add tinned tomatoes and chicken stock. Simmer for 25-30 minutes, then add rice. Cook for 15-20 minutes until rice is soft. Stir in prawns, add a touch of water and cook for another 3-4 minutes. Stir parsley in at the last minute.
