Sausage and Tomato Frittata

Ingredients
1 small onion, finely diced 1 clove of garlic, diced1 egg, beaten2 egg whites, beaten1 oz of crumbled feta cheese2 tbsp of graded parmesan cheese1 cup of grape tomatoes, cut into quarters
Directions
1. Pre-Heat oven to 375. Brown sausage in a small omlette pan on med high heat. Move sausage to a plate for later. Add olive oil, onions and garlic to pan on med heat and saute till onions are tender, about 5 min.
2. wisk eggs together in seperate bowl, then pour in to the pan over the onion mixture. Sprinkle the cooked sausage, tomatoes, feta and parmesan cheese over egg mixture. continue till eggs start to set.
3. Place pan into pre-heated oven for 5 min or till eggs are fluffy and eggs in center are set.

Serving Size: 2 servings or half the frittata
