Ingredients
1 cup Quinoa, dry2 cups red kidney beansI/2 red onion, minced2 stalks celery, minced1 green bell pepper, minced1/2 cup salsa1/4 cup olive oil1/2 cup cider vinegar1 tsp ground cumin1 tsp ground oregano
Directions
Rinse quinoa and boil in 2 cups of water. Once it is cooked, combine it with the kidney beans, onion, celery, bell pepper and salsa. In a small bowl, whisk together the olive oil, vinegar and spices. Pour over the quinoa mixture and stir well. Chill before serving.
