Ingredients
ground turkeyeggbread crumbsjalapeno pepperscilantroscallionslemonred potatosalt and pepperred pepper flakes
Directions
preheat oven to 425


heat peanut butter till more liquid - microwave for 30 seconds

mix it into the turkey

beat the egg before adding

grate a teaspoon of lemon zest

chop to a dice the jalapeno, cilantro, scallions

add in the rest of the ingredients and mix but do not over handle the meat

mold into a meatloaf

chop potatoes into 1/2 inch slices, line oiled pan with potato layers, sprinkle with salt, pepper and red pepper flakes

place meatloaf on top
cover with tin foil
bake at 425 for 45 mins or until meat reaches 165 degrees
