Date, Orange, Mango and Pomegranate Salad

2 oranges, peeled with a sharp knife and sliced horizontally2 mangos, peeled and sliced off the stone 8 fresh dates, stoned and halved3 Tablespoons finely grated pale Thai palm sugar1 Tablespoon organge flower water 3/4 cup pomegranate seeds1/4 cup sliced almonds, toastedmint leaves for serving3/4 cup Cool Whip, lite1/2 cup thick, Greek yoghurt
1. Place the oranges, mango and dates on a shallow serving platter.
2. Sprinkle the palm sugar and orange flower water evenly over the fruit and allow to stand for 20 minutes or until the sugar melts in the juice of the fruit.
3. Sprinkle the pomegranate seeds, almonds and mint over everything.
4. Fold the yoghurt into the whipped cream and serve on the side of the fruit salad.
