Flax Muffins with Apple & Raisins

1/2 tsp baking powder1/2 tsp baking soda2 tsp ground cinnamon1 tsp ground nutmeg1 cup ground flax seed (meal)1/4 - 1/2 cup low-fat soy flour1/2 cup sugar substitute (like Splenda)100 g container 0% plain (vanilla) yogurt (or whatever kind you choose, if you prefer flavoured or higher fat)1 (33 g) egg white1 tsp vanilla extract50 ml unsweetened almond milk1 small (138 g) apple, chopped (don't have to peel)1 cup (145 g) raisinsCan alter seasonings, types of fruit, nuts, yogurt flavour, to make recipe your own variety.
Combine dry ingredients
Combine wet ingredients
Mix two together, just until combined.
Place in lined (I use silicone liners or a silicone pan) muffin pan and bake until toothpick inserted in centre comes out clean - approx 15 - 20 minutes (longer for full-sized muffins)
Serving Size: Makes 24 minis or 12 regular sized muffins
