1 tbsp whole-wheat pastry flour2 tbsp yellow cornmeal1 tbsp applesauce, unsweetened1 tbsp + 1 tsp (4 tsp) unsweetened almond milk, plus 5 drops lemon juice1/8 tsp salt1/4 tsp baking powder1 packet stevia**note: the 2nd picture is a variation that includes 1 tbsp canned (no salt added) corn. A delicious 2nd option!
Mix all ingredients (first dry, then combine milk/lemon separately and add in wet) and microwave for 1 1/2 minutes (90 seconds).
