LF Vegan PB Maple Oat Cookies

Ingredients
1/2 Cup Whole Wheat Flour1/4 Cup Ground Flax Seed1/2 Cup Quick Oats1/2 Cup Brown Sugar1 Teaspoon Baking Powder1/2 Teaspoon Baking Soda1/4 Teaspoon Salt1 Teaspoon Vanilla2 Tablespoons Canola Oil1 Tablespoon Applesauce1/4 Cup Maple Syrup1/4 Cup Creamy Style Organic peanut ButterMade w/ 1 tbsp oil, 2 tbsp applesauce; 1/4 cup xyliotl in sugar, sf maple syrup
Directions
Cooking Time: 15 minutes or until golden brown
Temperature: 325 degrees
Makes 18 cookies

Cooking Directions:

Preheat oven to 325 degrees. Then dump ingredients into a mixing bowl and stir. You will really need to work at getting the ingredients mixed well. I do a downward smashing motion with my spoon as I stir. You could even put your hands into the dough and kneed a little. Drop 1 tablespoon size mounds onto a greased cookie sheet about 1 1/2 inches apart. Smash them down some with a fork. Then sprinkle with course sugar if you like.

After they are baked let them cool for 15 minutes before you dig in. They will be soft out of the oven and crisp up as they cool.

    I don't normally search for vegan items, but I need to make some cookies and I didn't have any milk, butter, or eggs in the house (budgeting....long story!)....anyway I had all these ingredients except for the flax seed (which I replaced with just whole wheat flour), and they were great! - 10/11/09
