slow cooker chicken

Ingredients
1 3.5-4lb roasting chicken1/2 c. diced onion1/4 c. diced carrot1/4 c. diced celery3 cloves garlic, peeled and smashed3 sprigs fresh thyme1 lemon, juiced
Directions
wash chicken, inside and out and pat dry
season insided and outside of chicken liberally with salt and pepper
add all ingredients into slow cooker
squeeze lemon over chicken
cover and set cooker to high for 6 hours
