Elise's Matzoh Farfel

3 sheets matzoh3 whole eggs3 egg whites1/2 c 1% milk1 tbsp sugar2 tsp cinnamonpinch of salt1 tbsp butter
Place a colander in the sink. Break 3 matzohs into smaller pieces in the colander and rinse with warm water then leave to drain while you prep the eggs. In a medium bowl add 3 eggs with yolks and 3 egg whites, milk, cinnamon, sugar and salt. Beat together. Add matzoh from colander and stir to combine.
Melt butter in a pan over medium heat (if you have a good nonstick pan, less butter is required.) Put matzoh and egg mixture in pan, and allow to cook for 2-3 minutes before stirring. Periodically stir the mixture to ensure even cooking, but keep the temperature at medium-low. This will take 10-12 minutes of cooking time, depending on how dry you like your eggs. I consider it done when some of the matzoh is a bit crispy on the edges, but most of it is still soft.
