Coconut Papaya Muffins

1 large ripe papaya, puréed smooth1 1/2 cups pastry flour1/4 cup Splenda1/4 cup sugar1 tsp baking soda 1/2 tsp cinnamon 1/2 tsp salt 1/4 cup unsweet coconut flakes 2 large egg whites1 tsp vanilla extract1 Tbsp I can't believe it's not butter light, melted1 Tbsp unsalted butter, melted
1. Preheat oven to 325 degrees. Line a muffin tin with cupcake liners and set aside.
2. In a large bowl, combine flour, sugars, baking soda, cinnamon, coconut and salt. Mix well; Set aside.
3. In a medium bowl, combine egg whites, melted butters, vanilla and papaya. Mix well.
4. Add the papaya mixture to the flour mixture and stir just until blended.
5. Pour batter into prepared muffin tin and bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool at least 10 minutes.
Serving Size: Makes 12 muffins
