Ingredients
2 pounds boneless, skinless chicken breasts2 tblsp Taco Seasoning1 cup-petite diced canned tomatoes, with juice1 medium onion, finely diced (1 cup)1/2 cup finely diced celery1/2 c shredded carrots1 cup salsa3 tblsp reduced fat sour cream1 can (11oz) of corn
Directions
Place chicken in slow cooker, sprinkle with taco seasoning, then layer vegetables and salsa on top. Pour 1/2 cup water over the mix. Set on low and cook for 6-8 hours.

Serving Suggestions:
-Wrapped in whole wheat tortilla
-Spooned into whole grain tortilla shells
-Layered over tortilla chips
