Cauliflower Fritters

Ingredients
1 large head cauliflower, steamed and roughly chopped2 cloves garlic, minced1 cup flour 4 egg whites 1/2 cup fat free mozzarella cheese, shredded1/4 cup parsley, finely chopped 1/4 cup hot watersalt and pepper cooking spray
Directions
1. In a large bowl, combine cauliflower, flour, garlic, egg whites, cheese, parsley, salt and pepper. Add water so that batter becomes slightly more dense than pancake batter.

2. On medium-low heat, add cooking spray to a 10 inch skillet coating bottom of the pan. Drop fritter by the spoonful, approximately 4 at a time, and cook until golden brown, turn once halfway through. Add a little more spray to the pan, and repeat with the remaining batter.
