Mini Baked Omelets

Ingredients
Egg, fresh, 1 medium Spinach, fresh, 1 cup Cheddar Cheese, 1 cup, shredded Bacon, 4 unit, cooked Goat Cheese, Semisoft, 1 oz
Directions
Saute the spinach until nice and tender in olive oil. Cook the bacon and chop into large pieces. Mix the eggs with salt and pepper to taste and add in the other ingredients. Pour into a sprayed muffin pan and bake in preheated oven at 350 for about 30 minutes.

Serving Size: Makes 6 large muffin sized omelets
