Bistro Style Crispy Citrus Chicken

8 oz boneless, skinless chicken breasts1/2 cup plain bread crumbs1/2 tbsp orange zest2 egg whites2 tsp milkdash pepper
1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper for nonstick cooking and easier clean up.
2. In a medium bowl, combine the egg and milk. In a separate dish, combine the bread crumbs, orange zest, and pepper. Set aside.
3. Use kitchen shears or a knife to remove any excess fat from the chicken. If needed, pat the chicken dry with a paper towel.
4. Place the chicken between two sheets of parchment paper, and pound it thin with a small skillet or a kitchen mallet if you have one. The chicken should be between no more than 1/2-inch to 1-inch thick. Dip the chicken breast in the egg, and then in the breadcrumbs.
5. Lay the breaded chicken breast on the parchment paper. Bake for 15 minutes, flip, and bake another 15 minutes.
