2 Tbsp I Can't Believe It's Not Butter Light2 Tbsp unsalted butter1 small onion, chopped1 clove garlic, minced 2 (10oz) packages frozen chopped spinach, thawed and drained of all moisture1 (6oz) bag cornbread stuffing12 egg whites3/4 cup Parmesan cheese, shreddedSalt & pepper, to taste
1. Preheat the oven to 350 degrees. Line a rimmed baking sheet with parchment paper and set aside.
2. In a large pan over medium heat, melt the butters. Add onion and cook until translucent and soft, 4-5 minutes.
4. Add the garlic and cook until fragrant, 1 - 2 minutes. Remove the pan from the heat and let cool.
5. In a large bowl, combine the dry stuffing mix, spinach, eggs whites, Parmesan cheese, salt & pepper and the cooled onion mixture. Combine well.
6. Roll the mixture into 24 1-inch balls. Place each one on the parchment-lined baking sheet.
7. Bake for 15 - 20 minutes, or until slightly browned.
