very good veggie soup

Ingredients
1 tablespoon olive oil1 onion chopped1 carrot chopped4 cloves garlic chopped or sliced1 red bell pepper2 quarts low sodium chicken broth1 can 28oz crushed or diced tomatos2 cups water1 head of cabbage
Directions
in a large sauce pan over med high heat, add olive oil, then onion. Cook for 5 minutes then add chopped carrot, garlic, and red bell pepper. Cook until tender. Then in a large soup pot combine all ingredents. Cook on med high heat for 20 minutes. Enjoy!
