Curried Red Lentils, mild

Ingredients
1.5 cup Chicken or vegetable stock OR 1 can of low sodium broth1 cup Red lentils1/4 Chopped yellow onion1.5 TB Curry Powder2 tsp Olive oil
Directions
In a small pot heat the oil and the curry powder until it starts to froth or bubble. Add onions and cook 3 to 5 minutes. Add 1 cup of stock and bring to a boil. Reduce heat to medium low and add the lentils. Cover and simmer. Add more broth if needed and simmer until the lentils have between a pasta and rice texture. Serve immediately.
