Buffalo Chicken Eggrolls

Ingredients
Chicken breast meatEgg Roll Wraps (find in your grocery store near tofu)Blue cheese (may substitute mozzarella)Buffalo sauceBroccoli slawRaw carrots, celery, sugar snap peas & dressing on the side - optional. (Not counted in nutritional info per serving.)
Directions
Boil the chicken breast and let it cool. Pull it apart, so that it is in small pieces.

On a clean working surface, spread out your egg roll wraps. Place a pinch of slaw, ~.75 oz chicken, 1 tbsp buffalo sauce and .25 ounces of cheese on each. Roll up egg roll style. Don't overfill the wraps - or the fillings will tear thru the wrap.

Place a baking rack on a cookie sheet (allows the wraps to cook on top & bottom without turning) and bake at 400 for 12 minutes.
