Yum Yum Curry!

Ingredients
1 red onion4 garlic cloves1 chilli pepper3-4 inch piece of fresh ginger1 small bunch of corianderCurry paste2 chicken breasts2 tins of chopped tomatoes1 tin of cooked green lentils1 Large potatoSpices:Chilli powderCuminCinnamonGround Garam MasalaOptional- Any vegetables that you fancy!
Directions
Finely chop onion, garlic, chilli, coriander stalks, then grate the ginger- fry these off with the curry paste for around 5-10 mintues until soft.

Add the tomatoes & spices, then simmer for 5 minutes. Add the chicken & potatoes and simmer for a further 20 minutes.

5 minutes before the curry is finished, add the vegetables (optional- chicken & potato will work fine!)

Garnish with the coriander leaves & tuck in- yum yum!

Serving Size: Makes enough for 6-8
