1 cup grated carrots1 cup chopped onion1/2 cup chopped celery1/2 medium head of cabbage chopped1 cup green beansmushrooms fresh 2 large choppedpetite cut diced tomatoes with sauce 3.5 cups2 cups black beanssoba noodles 1 1/2 cupschicken or veggie broth low sodium 8 cupsoregano 1 Tnutritional yeast 2 T2.5 T olive oil1 Tsp ground red pepper
In a large pot 2 1/2 T olive oil.. add veggies and saute about 5 minutes.
Add your broth and uncooked noodles and oregano and nutritional yeast.Bring to boil..boil for about 10 minutes.
Add your beans .. simmer to desired consistency.
Serving Size: makes about 12 -1 cup servings
