Maple-Walnut Granola

Ingredients
4 cups rolled oats1 cup spelt or rice bran1/2 cup dried cranberries1/2 cup dried currants1 cup chopped walnuts1 tsp vanilla extract1/4 cup organic coconut oil melted, or canola oil1/2 cup maple syrup
Directions
Preheat oven to 250 degrees F. In a large mixing bowl combine the oats, bran, dried fruit, nuts, and vanilla. Add the oil and stir evenly. Pour in maple syrup and mix well until evenly moistened. Mixture should be crumbly and sticky. Spread mixture on a cookie sheet and bake for 90 minutes, stirring every 15 minutes for even toasting until the mixture is golden brown and dry. Cool well and store in airtight container.
