Whole Wheat Biscuits

1/2 c whole wheat flour1/2 c self rising flour1 c unbleached all purpose flour4 tsp baking powder1/4 tsp baking soda3/4 tsp kosher salt4 tbl butter, cold, diced1 c low fat buttermilk
In large bowl mix together all flours, baking powder, baking soda and salt. Add diced butter and mush together until butter is pea sized. You can use a pastry cutter to do this or your hands. Add buttermilk and mix together until dough forms (it will be sticky). Flour counter and knead dough about 5-6 times. Roll out dough about 1/2 to 3/4 inch thick. Cut out biscuits and place on baking sheet lined with parchment paper. Bake at 450 degrees for 15-20 minutes. Makes 6-8 biscuits.
