Sweedish 1-2-3 vinegar

Ingredients
5/8 cup water1/2 cup sugar1/4 cup white wine vinegar1/4 carrot , peeled and sliced1/4 onion , sliced1 white peppercorns1/2 bay leaves , preferably fresh1/2 allspice berries
Directions
Combine all the ingredients in a saucepan and bring to boil over medium heat.
Stir until all the sugar is completely dissolved.
Remove from heat and let cool.
Pour the cooled vinegar into a container and sit on ice bath. until ready to use.
