Classic Whole Grain Belgian Waffles

Ingredients
1 2/3 cups lukewarm water (divided)1 tablespoon active dry yeast2 cups whole wheat flour1 cup buckwheat flour3 large eggs separated + 1 egg white 1/4 cup sugar1 1/2 cup skim milk1/2 cup unsweetened applesauce4 tablespoons unsalted butter1 tablespoon vanilla extract1 tablespoon cinnamon (optional)
Directions
Dissolve the yeast in 2/3 cup of warm water with a pinch of the sugar. Let it stand 5 to 10 minutes, until the mixture begins to foam. Meanwhile combine flours and salt in large bowl. Separate eggs and begin whipping whites until stiff peaks form. Add remaining sugar and egg yolks to yeast mixture stir to blend. Pour yeast mixture and remaining water, milk, melted butter, applesauce and vanilla into flour and beat until smooth. Fold the egg whites into the batter, let the batter stand for one hour stirring every 15 minutes. Cook according to waffle maker instructions. These need to cook a slightly longer to develope the crispy texture.
