Tofu Scramble

Ingredients

1/2 c chopped onion1 t olive oil2 T taco seasoning1 block firm Tofu, crumbled an pressed1 cup frozen spinach, drained & patted dry1 medium tomato, chopped1/4 c salsa
Saute onion in oil, add taco seasoning and small amount of water. Cook until softened.
Add Tofu to onion and seasoning mixture, stir well, and simmer for about 5 minutes.
Add spinach, tomatoes, and salsa to Tofu mixture, stir well, and simmer for about 5 more minutes.
Serve in tortillas as a burrito or taco filling, or serve on top of greens as a salad topping. Makes great leftovers.
