1 pound ground beef (80/15)1 onion, chopped.5 cup red bell peppers, cut into 2 inch pieces3 cups baked beans (you can save calories by using less beans, I had a big can, so that I what I used)1 can diced tomatoes1 tablespoon taco seasoning.5 cup all-purpose flour.5 cup yellow cornmeal.25 cup white sugar1 teaspoon salt1.5 teaspoons baking powder1 egg.5cup milk2 Tbs vegetable oil2 Tbs melted butter
Preheat the oven to 350 degrees F (175 degrees C).
Crumble the ground beef into a large cast-iron skillet over medium-high heat. Cook, stirring frequently, until beef is evenly brown. Drain the grease, and add the onion. Cook and stir until the onion is translucent. Add the red peppers, beans, and fajita seasoning; cook and stir until heated through. Spread out in an even layer on the bottom of the skillet.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil and butter until well combined. Pour batter over beef mixture.
Bake 20-30 minutes in oven until corn bread is cooked through
