Fancy Nancy Lentil Soup

Ingredients
1 T olive oil, .5 tsp turmeric, 3/4 c chopped carrots, chop half of a whole green pepper or 1 c chopped pepper, 2 stalks of celery chopped, 1 clove garlic smashed and chopped tiny, kosher salt = 1 tsp or to taste, 3 c beef stock (Kitchen Basic no salt) canned diced tomatoes = 1c, bay leaf, 1 c dry lentils.
Directions
saute veggies then add washed lentils, stock and seasonings. Use heat enough to get the boiling started, lower to next range and keep lowering until a simmer reached. I used a cover until it was time to reduce the liquid whereupon I finished the cooking by removing the lid, stirred until I was happy with the consistency.
