Stir Fry Cucumber with Dried Shrimps

1 large 8 1/4" Cucumber30 grams Ginger Root1 tbsp Shallots2 tsp Garlic1 tbsp Canola Oil1 tsp Dried Shrimps
You can either leave the skin on or off. Cut the Cucumber into 1 1/2" length and 1/4" thick. Clean ginger root by brushing off sand under the faucet. Use a cleaver to smash the ginger root. Peel and chopped the shallots and garlic.
Preheat the wok for 1-2 minutes on high heat. Pour in the Canola Oil and then add in the ginger root. After 1-2 minutes, add in the shallots, garlic and dried shrimps, stir fry for another 1-2 minutes. Add in the cucumber and 1/2 cup of water and cook covered for another 3-5 minutes.
