Renee's Pumpkin cookies

Ingredients

1/2 cup butter or shortening1 cup sugar2 eggs beaten1 cup cooked (canned) pumpkin2 cups flour1 tsp baking powder1 tsp salt (optional)2 1/2 tsp cinnamon1/2 tsp nutmeg1/4 tsp ginger1 cup mini chocolate chips, or raisins (optional)
makes approximately 2 1/2 dozen cookies
Preheat oven to 350 degrees.
Cream butter & sugar.
Beat in pumpkin and eggs.
In a separate bowl, have all dry ingredients ready. (I stir or mix them up a little to distribute them evenly.)
Slowly add the dry mix to the wet mix, until well combined. Fold in optional ingredients.
Drop by teaspoonfuls onto baking sheets. Bake for 12-15 minutes, until lightly browned.
