Chili sin Carne al Mole

Ingredients
1 large onion chopped1 small jalapeno chopped1 red pepper chopped3 cloves garlic smashed1 pound seitan, 1/4inch cubes2T chili powder1t ground cinammon1/2t cumin28oz diced tomatoes (unsalted - whole foods)3T unsweetened cocoa powder3T blackstrap molasses2 - 14oz cans unsalted black beans2.5c unsalted veggie broth
Directions
- cook onions and peppers for 2 min
- Add garlic and seitan and cook 8 min
- Add spices, another minute
- Add everything else
- bring to slow boil, cover, cook 30min
- sit unheated for 20min
