Chicken and Quinoa (or rice) Bake

2 cups of quinoa or brown rice2-3 chicken breasts1 clove of garlic1 tbsp. of olive oil1 bell pepper1 cup of broccoli1 cup of fresh mushrooms1 cup of chicken broth1 tbsp. of basil1tsp. of ground black pepperone can of low fat Cream of Chicken soup1/2 cup of mozzarella cheese (low fat)
Cut chicken into bite size pieces or strips and cook in olive oil. Add garlic, veggies, basil, black pepper and saute. Once veggies begin to become tender, add chicken broth. Simmer for 3-5 minutes.
In a 9x13 oven safe dish, spread out quinoa or rice to cover bottom of dish. Once veggies and chicken have simmered, scoop these ingredients out leaving the liquid in the pan. Arrange on top of quinoa or rice. Add Cream of Chicken soup to liquid and simmer, adding most of the mozzarella to this sauce. Reserve the some cheese to top off the dish. Once cheese has melted, pour sauce evenly over the dish. Top off with remaining cheese.
Bake 25-30 minutes at 325 degrees.
