Vietnamese Beef and Noodle soup

Ingredients
1 lb beef chuck tender (thinly sliced)2 Tbsp canola oil4 Cups low sodium chicken broth1 Cup water4 Oz rice noodles2 tsp low sodium soy sauce4 Cups bok choy (chopped)1.5 cup bean sprouts4 Tbsp basil
Directions
brown beef in pan with canola oil 2 to 3 minutes. remove from pan and then add bok choy to oil and wilt for 2 to 3 minutes. add broth and water and bring to a boil. add rice noodles cook 4 minutes. add beef back to soup and 2 t soy. cook 2 to 3 minutes. serve 1 and 1/3 cup and top with sprouts and basil.
