2 Tbs. Powdered Egg Whites (or 3 Egg Whites)6 Tbs. Warm Water (Omit if not using powdered)1 tsp. Vanilla2 Tbs. Flax milk (or your milk of choice)3 Tbs. Unsweetened Applesauce2 Tbs. Rolled Oats1 Tbs. Brown Rice Flour1/2 tsp. Baking Powder1 packet Sweet leaf sweetener1 Dried Plum, snipped or chopped (You may use raisins, nutritional values will change slightly)Protein Frosting:1/2 scoop Vanilla Protein Powder1 tsp. Fat free/Sugar Free Jello mix, dryEnough liquid to create proper consistency
Mix wet and dry ingredients in separate bowls.
Combine all the ingredients and pour into a large microwave safe mug. (I use a 2-cup Pyrex measuring cup)
Microwave for about 5 minutes.
Prepare frosting while it cooks.
Remove from microwave, invert onto serving plate. Allow to cool just enough to frost and enjoy!
Serving Size: 1 Muffin
