QUINOA PIZZA BITES

Ingredients
1 CUP UNCOOKED QUINOA2 LARGE EGGS1 CUP CHOPPED ONION1 CUP SHREDDED MOZZARELLA2 TSP MINCED GARLIC1/2 CUP FRESH BASIL OR 2 TSP DRIED BASIL1/2 CUP CHERRY TOMATOES, DICED1/2 TSP SALE1 TSP PAPRIKA1 TSP OREGANOPIZZA SAUCE FOR DIPPING
Directions
1) place quinos and two cups of water in a covered pot. Bring to boil and simmer for 20 minutes.
2) Preheat oven to 350 degrees
3) Mix all ingredients except pizza sauce
4) Put into mini muffin tin, filling each cup up to the top, and press down to compact.
5) Bake for 15-20 minutes. Cool 10 minutes. Serve warm with sauce for dipping

    I had people over for a Christmas cocktail party and these went over very well, brought the leftovers to work for lunch and they were just as delicious cold as they were warm. I also added a couple splashes of hot sauce to the mix to give just a small kick to them as well. - 12/2/13
