Quick and Easy Cornbread

Ingredients
3 tbsp Earth Balance, softened1/3 cup sugar1 tsp vanilla1 egg3/4 cup soy milk3/4 cup flour1/3 cup cornmeal1.5 tbsp baking powderPinch Salt
Directions
Cream butter and sugar together.
Add in soy milk, egg, and vanilla.

Combine dry ingredients and then slowly add to the wet ingredients. Mix together with a fork or whisk until blended but don't over mix. It's ok if there are a few small lumps.

Pour into a well greased small pan.
A loaf pan would work or I used a 6" round glass one I have. I used a healthy spray of olive oil to grease the pan.

Bake at 400 for 25 min or until golden brown and a toothpick comes out clean.
