Chicken Curry

Ingredients
4 Tbs. butter2 onions thinly sliced2 lbs of boneless chicken breast meat cut into 2" pieces1 2 in. piece of ginger cut into 1/2 in slices4 cloves of garlic1/2 cup of whole almonds12 oz plain organic greek yogurt1 Tbs garam masala1 Tbs red curry powder2 tsp cayenne pepper1 tsp tumeric1 tsp salt1 15 oz can of organic diced tomatoes3 Tbs chopped cilantro (optional)
Directions
Melt butter in an iron skillet and cook onions until soft and beginning to brown. Add onions to the slow cooker. Place chicken pieces on top.

Combine ginger, garlic, almonds, yogurt, garam masala, curry powder, cayenne, tumeric, and salt in a food processor and puree until smooth. Then add tomatoes and pulse a few times until blended. Pour mixture over the chicken and cook on high until bubbly then cook on low for 5 hours, or cook on low for 8 hours. Sprinkle with cilantro before serving.
