1 medium onion (or 1/2 large onion) diced2 jalapeno peppers diced 2 tbs butter (can use canola oil) 1/3 C Fenugreek (found at most Indian import shops)1/3 C Garam Masala (can be found in the grocery store)1 Tbs Chipotle pepper 1 Tbs Cayenne pepper 1 tsp Cumin 1 Tbs Garlic powder 4 C red lentils 11 C water Salt to taste1 bunch of chopped cilantro
Sautee diced onion and jalapeno. Add spice to sautee. Allowing the spices to cook awaken the flavors. Add water, lentils, and salt. Bring to boil and then simmer until lentils are soft. Remove from heat, add cilantro, and rest for 5 minutes. Serve with rice or alone.
