Mexican Cornbread

Ingredients
1.5 cups of cornmeal, selfrising2 eggs. large1 cup of lowfat buttermilk1/3 cup of canola oil8 oz. lean, ground beef, browned and drained1 can of cream style corn1/3 cup Jalapeno Peppers, pickled & chopped1.5 oz of Kraft 2% low-fat cheddar cheese
Directions
Mix buttermilk, eggs, creamed corn, oil & jalapeno peppers diced. Pour 1/2 of mixture into a 9X11 pyrex dish, sprayed with pam. Then add grd. beef that has been browned & drained, to the top of the mixture. Add 1/2 of cheddar cheese, then pour rest of cornmeal mixture to the top of grd. beef & top with the remainder of the grated cheese. Bake at 375'
