Vegetarian French Onion Soup

Ingredients
1.5 Tbsp Olive Oil6 medium to large Onions, sliced (I use a food processor!)Black Pepper, to taste2 -3 Tbsp Soy Sauce6 cups Water6 small French Bread, cut into cubes6 slices Meunster Cheese
Directions
1. Heal olive oil in a large pot on med. low.
2. Add onions and black pepper, then cover pot.
3. Start the bread - Toast bread cubes on 250 for 20 minutes.
4. Stir onions occasionally for 20 -30 minutes until they are caramelized - they should be soft and turning to a caramel color.
4. Then add soy sauce. Start with 2 Tbsp, add more to taste
5. Add water
6. Simmer for at least 15 minutes

Assembly: put bread crumbs in the bottom of the bowl, Ladle the onions and put a whole lot in each bowl. The bread will soak up a lot of the broth, so add more until it almost cover the onions. Put one slice of cheese on top, then cover until cheese is completely melted - about 5 minutes.
