Ginger and Carrot Soup

Ingredients
1 onion, chopped6-7 carrots chopped coursly3/4 coconut milk2tsp grated gingerJuice of one orange500mil of soy/almond/skim milk (choose one)1/2 tsp chilli powder1 tsp cinnamon powderTofu/Chicken (optional)
Directions
Chop onion into small pieces
Cook onion until tender
Add grated ginger
Stir in chilli and cinnamon powder
Add chopped carrots
Stor in coconut milk and other milk
Add the juice of orange
Mix well, cover and bring to boil. Reduce heat and simmer
Once carrots are tender, allow the soup to cool and use a food processor to puree the soup.
If adding tofu or chicken, cook these first and then add in once soup has been processed. That's it! Delicous!
