Homemade Granola

  • Number of Servings: 30
Ingredients
• 3 cups rolled oats• ¾ cup sliced almonds• ¼ cup wheat berries• ½ cup sunflower seeds• ½ cup sesame seeds• ¼ cup pepita seeds• 2 tbsp flax seeds• 1 cup shredded coconut• 1 cup favorite dried chopped fruit (optional)• 1 tsp cinnamon• 1/2 tsp salt• 1/3 cup coconut oil • 1/3 cup good honey• 1/3 cup agave syrup• 1/3 cup apple juice or apple cider (or maple syrup, sweetened water, pineapple juice, white grape juice, etc.)
Directions
Heat oven to 350º. In a large mixing bowl, stir together the first 11 ingredients. Combine the coconut oil, honey, agave, and apple juice in measuring cup; microwave at 30 second intervals to melt the coconut oil. Stir to combine.
Pour the liquid mixture over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Spread onto a large sheet pan lined with parchment. Bake until the mixture turns a nice, even golden brown, around 25-35 minutes, depending on oven.
Remove granola from the oven and allow to cool completely. Break up into crumbles or cut into bars as desired. Store in an airtight container.
