Frittata Muffins

Ingredients
10 egg whites2 cups mushrooms, cooked down to 1 cup, with 1 tbsp dry Sherry1/2 cup Jimmy dean precooked Turkey Sausage Crumbles1/4 c. 2% shredded cheddar cheese1/2 cup fat free cottage cheese
Directions
preheat oven to 350
cook mushrooms in sherry and canola spray
grease a muffin pan very well
beat egg whites and cottage cheese together, then portion into muffin pans
Evenly disperse sausage crumbles and mushrooms into each muffin cup
top each with a very small sprinkle of cheese
Bake until golden brown
allow to cool, then store wrapped in fridge and pop in microwave to heat for a quick breakfast!
