2 tbsp olive oil1 coarsely chopped onion1 clove garlic, finely minced1/2 cup chopped celery1 cup mixed beans (this assortment contains: green whole peas, green whole lentils, red split lentils, pinto beans, white beans, red beans, light red kidney beans, black beans and black eye beans) I'm sure you can use any assortment of beans.4 cups chicken stock (I used vegetable stock)2 cups water1-28oz can diced tomatoesSalt and pepper to tasteInstructions
1. Soak beans in cold water for 12 hours. Drain before using.
2. In a large saucepan, over medium heat, saute olive oil, onion, garlic and celery for approx. 5 mins until onions and celery are translucent. Add beans, tomatoes, stock and water. Add salt and pepper to taste.
3. Increase heat to high and bring to boil.
4. Reduce heat to medium-low. Cover pot and simmer for 1 1/2- 2 hours. Stir occasionally.
Serving Size: 1 cup
