Chocolate Baked Donuts

Ingredients
1 c flour1/4 c cocoa powder1 T baking powder1/2 t salt1 t cinnamon1/4 c sugar2 T land o lakes butter with canola1 egg1/2 c milk (1%)1 t vanilla
Directions
1. Preheat oven to 375° F.
2. Combine the first 5 ingredients in a bowl and set aside.
3. In a standing mixer (or bowl using a hand mixer), cream the butter and sugar.
4. Add the egg, buttermilk and vanilla and combine.
5. Add the flour mixture and mix until just combined.
6. Spoon into greased and floured donut pan.*
7. Bake for 10 minutes, or until the tops spring back when lightly pressed.
8. Cool.
(You can drizzle with frosting but will add calories.)

* If you don’t have a doughnut pan, place the dough in a large Ziploc bag, seal the bag airtight and then cut off a 1/2 inch of one corner. Pipe the dough into (circles) doughnuts on a Silpat or parchment-lined baking sheet. Bake for 10 minutes and allow to cool.

    I didn't have any white flour, so I used whole wheat pastry flour along with coconut oil instead of butter. It worked even at 5,000 ft. My batter rose very quickly and became quite thick. It made 6 very large cake-like donuts that weren't too sweet. - 1/1/14
