Baked Potato with Beans in Tomato Sauce

Ingredients
1 Medium Potato (around 190g)1 tsp olive oil50g Chopped Onion1 Clove Garlic1 Pinch Dried Thyme1 Pinch Mixed Herbs1 Tin Chopped Tomatoes1 Tin Mixed Beans(Drained)
Directions
Preheat the oven to 200 degrees C. Place the potato on a high shelf and bake for 1hr-1hr 15mins or until tender all the way through. Meantime, heat the oil in a non-stick pan and add the onion and garlic. Cook gently until softened but not browned. Add the thyme, mixed herbs and chopped tomatoes and simmer the sauce uncovered for 30 minutes. Add the beans and simmer for a further 10 minutes. Serve with the baked potato.
