Apple-Raisin Oatmeal cookies

Ingredients
Quick Oats 4.5 oz, lightly toastedAll Purpose Flour .5 cup Cinnamon, ground, .5 tsp Baking Soda, .25 tsp Salt, .25 tsp Brown Sugar, .25 cup, packed Margarine, soft, .25 cup Apples, fresh, 1 medium, peeled, cored and grated Egg, 1 large Vanilla Extract, .5 tsp Raisins, .5 cup
Directions
Makes 24 cookies

Preheat oven to 350
Spray 2 baking sheets with nonstick cooking spray. In large bowl, combine oats, flour, cinnamon, baking soda and salt; set aside. In medium bowl, with mixer on high speed, cream brown sugar and margarine until light and fluffy; add apple, egg and vanilla extract, and beat until well blended. Add oat mixture; stir to mix well. Add raisins; stir until combined. Drop dough by tablespoonfuls onto prepared sheets forming 24 equal cookies and leaving 2 inches between each. Flatten each cookie with spatula. Bake in center of middle oven rack 12-15 minutes, until lightly browned.

    I wasn't optimistic, but I had to use up some apples. Yum-O! I used cranberries instead of raisins and they give the cookies a fun bite! They're like a cross between a granola bar and a cookie. I'll probably make them again (tomorrow). - 11/24/08

    It's difficult to know how much 4.5 ounces of quick oats is. Why not just indicate 1 cup, 2 cups or whatever the way the rest of the recipe is written? - 10/24/14

    I used Organic Whole Wheat Flour and as much as I can't stand sugar subs., I too used Splenda blend and it turned out AWESOME. My inlaws love it even though it's "healthy" or somewhat healthy. My husband will love them and as a type II diabetic, I love them too. - 4/22/09
