2 tbsp. Olive Oil1 medium onion, chopped1 medium carrot, thinly sliced4 cups waterVegetable or chicken bouillon, if desired2 cups shredded cabbage or slaw mix1 can White Kidney Beans (Cannellini Beans), drained and rinsed1 tbsp. dried sweet basil, or 2 tbsp. freshSalt and pepper to taste
1. In a large saucepan, heat the olive oil and cook onion and carrot until the onion is translucent.
2. Add next five ingredients. Bring to a boil, reduce heat, and simmer, covered, for 20 minutes.
3. Season with salt and pepper. Serve hot.
