CLEAN Mushroom Soup

Ingredients
1 Tbs EVOO1 cup onions, chopped3 cups fresh sliced mushrooms2 tsp fresh thyme2 Tbs sherry vinegar3 cups vegetable broth
Directions
Add EVOO and onions to a heavy bottomed soup pot over medium-low heat. Saute 5 min. Add mushrooms and thyme, saute 8 minutes until beginning to brown. Add sherry vinegar, let bubble. Add broth, bring to boil. Simmer for 10 minutes. Season with sea salt and freshly ground pepper.
